Vegan Chocolate Chip Cookies

These bad boys are cheap, easy to make and unapologetically…delicious. I’m not for a whole lot of text when I post recipes so let’s get right to it…

Preheat your oven to 350.

Ingredients:

2 cups chickpea flour or unbleached flour (use what you have)

2 teaspoons baking powder

1/2 teaspoon salt

3/4 cup of chocolate chips

3/4 cup coconut sugar 

1/2 cup coconut oil 

1/2 cup almond milk, or water (whatever is easier)

Mix together the coconut oil & coconut sugar, then add the almond milk.

In a separate bowl mix the flour, baking soda, baking powder and salt.

Combine the wet & dry ingredients, and fold in the chocolate chips.

Make tablespoon sized balls & place them on an ungreased cookie sheet or on a sheet of parchment paper on the baking sheet, then flatten them out a little.

Bake for 7-10 minutes.  Try not to eat them all before they completely cool…you will want to show them off.
