Nettle Pesto
- 4 ounces of stinging nettles leaves (must blanch them in hot water to deactivate “sting”), or 2 ounces of dried nettle powder (can easily be found online), if you can’t find either, use fresh basil.
- 1 clove garlic, minced
- 1/2 cup pine nuts or walnuts
- 2 tbsp lemon juice
- ½ cup olive oil
- 1/2 cup nutritional yeast
- Salt (to taste)
Blend ingredients and serve.
