Organic chickpea burger on gluten free bun
For the longest time I just made my son hot lunches and put them in a stainless steel thermos, but this year he wasn’t having it. He wanted “sammiches” lol.
Thankfully I struck vegan, soy and gluten free gold with these bad boys. At the end of his first day of school my first question wasn’t, how did you like your teachers, did you have fun, what did you learn? It was: how was your sandwich? And…he loved it!!! Whew!! *wipes sweat off brow*
The burger is an organic sunshine burger (store bought, had to re-season it cause if you don’t it’s super bland), I put a layer of red pepper hummus on the bottom which is not visible, soy free vegenaise, chopped up some yellow squash on the top, marinated romaine lettuce, a slice of tomato and topped with some black salt and spices for a kick.
You know you’ve hit the jackpot when your child comes home from school and asks for another one for dinner. Woot woot! lol ~Aiya Abrihet
